Wow I can’t believe it’s the end of August!! This month has been absolutely crazy! I’ve been so busy travelling and spending time with my mom that the time just flew by! Now I’m hastily trying to pack, clean out my apartment, work, do end of contract stuff, finish up with last minute things, and not go crazy with feeling overwhelmed! I feel bad about not blogging for so long, and since I’ll be moving to Vancouver on Saturday, and jumping right into university on September 3rd, I know it’s going to be a while before I get another chance to blog.
So before I get into today’s post, I would like to express my sincere appreciation for all the outpouring of love, support and such positive comments I received from last week’s post (here). That was my post popular post to date. I received so many personal emails and messages from both friends, family and strangers which really means so much to me. Weight gain is a struggle for everyone, so I know a lot of people out there can relate to it. I am definitely feeling a lot better in my body now, and especially by reading people like Molly Galbraith (Is Being Really Lean Worth it? and It’s Hard out Here for a Fit Chick), feel like I’m on the right track towards self-acceptance.
It’s definitely a journey but I am keeping my eyes on the future and knowing that I’m going to come out of this healthier, happier, fitter and more on top in the long run 🙂 Continue reading →
Hello out there! I’m super excited to get back to recipe making and blogging! I’ve been trying not to go too crazy but there are just so many things I want to try!!
One thing I really miss is yeasty bread. Make it crusty, seedy, yeasty bread and you really got me! Alas, this isn’t your typical yeast bread, but you know what- it does taste delicious! I got the idea after seeing some recipes over on Foodie Fiasco– Kelly has some awesome stuff. But I’ve changed it up to make it single serving, and more suited to my macros. Continue reading →
As you know, I LOVE kabocha. Love Love Love Love Love Love Love kabocha!!! Actually now, I get a discount at my local “Angel Home Mart”- just a random Korean grocery store on danhobak 단호박, as it’s called here. I told them it is my favourite, and because they like me, they say “special discount, only for you” 🙂 Continue reading →
Okay these aren’t real cookies, but I’ve been calling them cookies in my head for months now, so I’m going to continue to call them cookies. You have my permission to change the name or think otherwise. REGARDLESS, they are good. And cookie-like. Or maybe blondie-like. I don’t really know, I didn’t grow up eating blondies… yes okay cookie-blondie like. Aha! A much better name! Continue reading →
So this dish is kinda a Bulgogi/ Japchae hybrid. Bulgogi is a Korean beef dish- marinated beef stir-fried in a sweet sauce with some vegetables and Japchae is stirfried sweet potato noodles and vegetables in a sweet sesame soy dressing. However mine is minus the high fat, high carbs, sugar and noodles. With the help of aloe noodles (or kelp noodles) this dish gets slimmed down, and I use Continue reading →
